Riki brings us another delicious recipe this month it’s coconut-lime amaze balls:
3/4 cup almonds
3/4 cup macadamia nuts
1 cup pitted Medjool dates
1/2 cup chocolate chunks
1/2 cup dessicated coconut
1 tbsp coconut oil
1 tsp lime zest
Juice of 1 lime
Pinch of sea salt
1. Pulse nuts, dates, chocolate chunks and coconut in a food processor until it’s the texture of gravel. Save a little of the dessicated coconut for later.
2. Add the coconut oil, lime zest, lime juice and salt. Pulse again until the mixture comes together in a big ball of dough. If needed, add more lime juice or water by the teaspoonful.
3. Roll into 1-inch balls , roll into the saved dessicated coconut so it sticks and coats the outsides. Refrigerate until ready to serve.
